For genuinely flexible tickets (free changes, cancellations) you need "Flexible" fare classes which cost 20–50% more than the cheapest basic economy.

Yes. Set the outbound to ±3 days and lock the return date, or vice versa. Useful if you have to be back on a specific day (event, meeting) but outbound is flexible.
